Not Milk & Cookies recipes

I bought this book in Tina's store in NY within an hour of trying one of her cookies. A food tour took us by Milk & Cookies where we sampled Tina's amazing chocolate chip cookies (which I'd still recommend to anyone!). The book is incredibly disappointing.

I bake a lot, and while I've made mistakes before, I've tried several times to use this book and am sure I didn't make any mistakes in following directions EVERY time. I also used a scale to measure ingredients, and keep premium ingredients in my house.

Like others here, I agree the measurements are off. The first recipe I tried was the one that made me buy the book in the first place: the chocolate chip cookie. And like others, mine went wide and flat, delicious, but with a poor texture. There's no shortage of tasty cookie recipes. Funny thing about mixing fat, flour, and sugar in large quantities, it generally tastes good. I bought the book to hit that texture and balance I'd never seen in a cookie before.

And like others, I'm left to experiment. I increased the flour, and they're still unsatisfactory. I increased it even further, and they're STARTING to get closer to where I want them to be. I could also try processing the oats less, decreasing the butter, adding additional oats at the end to help with structure and chewiness, or kneading the dough longer (something borderline unheard of with quick breads). I could try all these things and more. I didn't buy the book to waste ingredients and guess at the missing parts to a recipe. I bought the book to replicate the cookies that sold me on the book in the first place. I had no shortage of "fun ideas" for baking. This book provides little more than a finger pointing in the general direction for success.

I'm giving it two stars because the pictures are enticing, there are some incredibly good ideas for cookies (despite the passive aggressive traps that are the inaccurate measurements), I haven't tried all the recipes (maybe there are more accurate ones, but from fellow reviewers, it doesn't look that way), and because the book is all around laid out very smartly, with each cookie in its own "family," an additional section on cookie-related recipes, and a smart bit of advice in the front that the author seemed to completely ignore.

I paid just under full price for the book. It was $24.95 and the tour I was on gave me a 10% off coupon. I would honestly not buy this book even if it were $5. I've already wasted well over $30 in ingredients for cookies unsatisfactory to present to co-workers or friends. Even in my home, each bite is bitter with the wasted potential of this book.

Edit 11/13/11: I am changing this from 2 to 5 stars. I've had the book for some time now, and had a chance to go through many of the recipes. I think I found what was causing them to go flat for everyone, and it's odd that it isn't emphasized more in the book. When it says to whip the butter to "light and creamy," they really mean whip the bejesus out of it. I put it on a Kitchen Aid mixer with the whisk attachment and just leave it on for a good 5-6 minutes on medium. I discovered this when I got distracted and left it on for far longer than I usually do; I had no idea butter could take on that texture, it reminded me of whipping egg whites to stiff peaks. I guess that "thicker" butter holds everything together long enough for the flour to do its job in the oven, versus going to liquid too soon and causing the whole structure to collapse (pure conjecture). I've made the chocolate chip cookie recipe 6 times now, and they've always gone flat and wide until I found this technique out, and the past two times they've been spot on examples of Tina's shop. Anyways, that's the first crucial thing that should be bolded in her print. As for the other, I suppose not overworking the dough. She says to knead it, but I ignore her, and lightly work the dry into the wet until just combined. That one is more common baking knowledge, but I just wanted to mention it.

So, bottom line: whip the butter! I haven't done every recipe yet, but I've done a few from each chapter and this one change is when everything started to work correctly.

12FEB12 update: Also don't do too small scoops. I tried to stretch a batch out further and they didn't collapse, but they lack that thick chewy texture (this applies to the peanut butter cookies as well). So just to recap: whip the butter thick!, don't overwork the dough, and be generous with your scoops (about 2 Tablespoons).

Kinda Like Two Books in One

This book is a bit like two cookbooks in one. The first half of the book consists of the recipes for the basic doughs and their variations. There are five basic doughs: vanilla, double chocolate, oatmeal, peanut butter, and sugar. Some of the recipes that accompany the doughs call for simple additions (salted peanuts + peanut butter dough), but others take the dough and make it into a different type of cookie (sugar cookie dough to lemon drop cookies). I love making up a batch of dough and then baking fresh cookies from it over the next few days. These recipes are a great way to take it one step farther and make up one dough but get several different kinds of cookies from that dough. The book says that the doughs can be stored in the fridge for a week or the freezer for a month, so they definately lend themselves to being made ahead of time.

I tend to judge a cookie book by it's chocolate chip cookie recipe. The vanilla dough has ground oatmeal in it, and the chocolate chip cookies that come from it remind me of the ones from the $250 department store cookie recipe legend (which I mean as a compliment since I like to make those when I can't decide between chocolate chip cookies and oatmeal cookies). I did find that even though the recipe doesn't call for refridgerating the dough before baking, that my cookies held their shape better after the dough was chilled. There is also a more traditional chocolate chip cookie recipe (with an untraditional ingredient), and a recipe for chocolate chip bars.

The second half of the book has individual cookie recipes and is divided into special cookies, family favorites, and brownies and bars. Some of the recipes are pretty standard (snickerdoodles, gingersnaps, etc.), but there are also some recipes that are more unusual (ciambelli, sfingi, etc.)

All of the recipes have measurements listed by weight and by volume.

Ironically Inaccurate

Flavorful cookies. Enticing pictures. But the recipes take some figuring out- note in the margins, trial and error, which is not what I paid for.

At the beginning of the book, we are advised to use weight measurements instead of "cups" or "tsp" etc. The thing is, when something called for "1 1/2 cups", she would list it as "7 oz." Well, a cup is supposed to be "5 oz". I went ahead and followed her measurement instructions since they were just a bit off; and I have no idea if my base dough turned out correctly. I do know that while she says the dough should make 2 dozen cookies, mine made over three, and although I could have possibly made smaller cookies (though I was shooting for 1 1/2 inch balls, just as advised) the interesting thing is that they were still incredibly under done at 8 minutes. In fact, they weren't really ready for 15 minutes. Is my oven going out? I don't think so; I just baked a cake for my daughter's birthday last weekend, without much deviation from the recipe. I suspect the cookies would turn out differently if I used measuring cups.

It would, as some other reviewer suggested, be helpful if Tina would have described how the dough is supposed to feel. The peanut butter dough turned out the lightest peanut butter cookie dough ever (which is a good thing!) but was it right? Was it too light, and therefore took longer to bake? Maybe I'll have to go down to the bakery and taste one to find out.

June 1 update: My daughter was attracted the picture of the creme-filled chocolate cookies (like Oreos) and we made them- again, I decided to go with the weight measurements. Is anyone else using those? Or are you just using cup measures? Anyway, they turned out beautifully- but almost inedibly sweet. Even my five-year-old could only take three bites before putting it down. I'm going to try the blondies next, and the chocolate chip cookie, and if I can't get those to work, I'll sell this book back.

June 11 update: We tried the chocolate chip cookies, using 10 oz. flour instead of 8 oz. as recipe called for. Delicious! Great texture! Finally! I've been wondering how all of the recipes are consistently short on flour in the recipes and I think it might be that she expects you to pick up 1-3 oz. flour in her last step where you dump the dough onto a floured surface and finish mixing it there. But again, when she emphasizes accuracy and provides weight measurements for everything, it might be helpful for her to say for example, "flour a clean work surface with 2 oz. flour" in order to get consistent results. As for me, I'll just interpret each cup of flour as 5 oz and I think everything will come out okay.

Thanks for your patience! I really wanted this book to be great. It did take some figuring out. Fire her editor! Ha ha.

Amateurish and Incoherent

This is the first kindle book I've returned. There aren't that many books on Spark yet, so when I saw a new one for only $1 on Kindle, I figured it was worth a shot. And there were tons of good reviews, so what could go wrong?

I have no idea who is writing these good reviews (probably the author's friends), but first of all, there was not only an absolute lack of editing, but there wasn't even spell checking. I knew this couldn't be professionally published, so I looked up the publisher, and sure enough it was produced by a self-serve publishing service. That explains it. The author sounds like he speaks English as a second language, which is fine, but he really should have had an English-speaking editor. The quality of the code snippets were lousy too: fuzzy and pixelated even when viewing on a PC.

Some will be thinking that I am nitpicking on the editing, language, and presentation. Unfortunately, they weren't the major problem. There is not a lot of useful information in here. The author does seem to know a lot about the subject, but the information in the book seems like spurts of random, disconnected ideas. Early in the book he says let's get our hands dirty and install Spark, but his "instructions" are just to go to an unspecified website of a distribution, download it and install it. No specifics where exactly to download it from or which product in particular. Yes, I was able to google it, but then what do I need the book for? And that installation didn't lead to anything, as there were really no tutorials beyond starting a console. The rest of the book got worse, and I found myself thinking that I could get better information just by reading the free documentation.

I think the content is better suited to a blog that can be accessed for free. Even $1 felt like I wasted my money, so I returned it and will buy the O'Reilly book instead.

Poorly organized and edited, not much to be gained from reading this

Written in a slapped-together style. It appears as though the author and editors speak English as a second language or something. I frequently found myself guessing about the intended meanings of phrases, sentences, even paragraphs, and I have over 30 years of experience reading computer science texts. The material presented is poorly organized and fairly useless as a reference guide. And in several places the author goes off into lengthy praises of Spark's capabilities without detailing what they are. I truly feel as though I wasted my money on this book (even at that $3.99), not to mention the hours spent reading it.

This is the first time I have disagreed so completely with the majority of Amazon user reviews of a book, leading me to wonder whether many of the positive "reviews" might just be attempts to game the system. Rereading them now, many sound like they were invented by drawing from a common list of phrases and keywords, and some of their praise would be over the top we even for a genuinely excellent book. Shame on me for not reading the critical reviews before buying, even when they were outnumbered 15:1.

Worst technical book I have ever encountered

I was hoping to get a quick overview of Spark from this book but was extremely disappointed. The author clearly does not know how to write in English or perhaps in any other another language at that. It is redundant and practically useless as a guide to leaning Spark. I will be returning it.

Why does Amazon even offer such poor quality books?

Mind, music, and emotion.

Ostwald has written a careful and insightful biography. Not only are effects of mental illness in musical creativity explored, but there are a number of interesting philosophical issues raised about mind and it's functioning. The subjective experience of creativity, musical or otherwise, is impossible to communicate fully, but Ostwald does a remarkable job. Ostwald's thoughts on musical expression and meanings therein are original, and not extensions of Suzanne Langer's (or other philosophers') interpretation. That Ostwald himself is a pianist as well as psychiatrist allows an intimate understanding of musical cognition, and this in conjuntion with his psychiatric training makes for an unusual analysis. This is not light reading,but definitely in range of an interested reader. It is thought-provoking and facinating. I highly recommend it.

Music, meaning and madness

Ostwald isn't a normal biographer. He is concerned with more than the 'facts'. His focus is on the complex relationship between Schumann's music, his life, his mental state and his relationship with Clara. But to this end he has done a major service to our understanding of Schumann by going well beyond the published sources. Ostwald has translated hitherto unpublished diaries and correspondence that reveal a Schumann who is considerably more complex than he appears in biographies up to this.
Certainly, Ostwald's interest in the psychiatric elements of Schumann's life results in a certain amount of terminology, but this is not jargon; there is a chapter which reviews Schumann's illnesses using current American diagnostic guildelines, so this is hardly psychobabble!
Ostwald is also a tireless advocate of the less-well-known Schumann, for which he also deserves credit.
And finally, the chapter on Schumann's final illness is haunting and chilling. He died a much more wretched death than we supposed.
Strongly recommended.

Insightful and Realistic

The late Peter Ostwald's biography is still the most insightful, intelligent and accurate account of Schumann's life and his illness. Dr. Ostwald undertook a very careful study of all the factual material available and drew the most realistic, sensible and compelling conclusions about Schumann's life. Schumann, like other composers, was long regarded as schizophrenic while some writers are still recycling the old notion that he suffered from syphilis and that it was the cause of his mental decline. Schumann was, as Ostwald rightly claims, bipolar. The signs of his illness were in place long before he might have contracted syphilis and even that possibility is in doubt. Ostwald brought Schumann scholarship into the 20th century and debunked a lot of misconceptions about the composer, his illness and his relationships. Highly recommended.

An original romantic historical nove and a REAL winner!

I first read Gwen Bristow's Jubilee Trail in high school and it quickly became a beloved book. Over the years I read the book 2-3 more times. Of course I remembered the storyline and the characters, but the novel is so fascinating that I enjoyed the multiple reads as much as I did the first time.

Adventurous eighteen year-old Garnet Cameron, a member of New York's society families, has just graduated from finishing school and is trying to find a direction for her life now that her schooling days are over. She meets a young man, Oliver Hale, who has come to New York from California. California at this time is still part of Mexico and not yet a US state. Oliver, a frontier trader, and his brother, own a large tract of land, a rancho, in California and he has come to New York City to buy supplies to bring west with him. Garnet meets him at a society function, and is immediately drawn to him. He tells her about the journey to the unknown territory of California. Garnet is riveted by Oliver's tales of adventure and excitement and longs to see the things he tells her about. Oliver proposes marriage and Garnet happily accepts. She is thrilled about her new marriage and the thought of their exciting trip west.The plan is that Garnet will travel to California with Oliver while he closes up his business out west and they both will return to New York the following year.

Traveling beyond St. Louis, Garnet and Oliver set out to cross the Great Plains. The trail is hard-going, but Garnet enjoys it with wide-eyed wonder. They arrive in Santa Fe after several months to replenish supplies and begin their journey on the Jubilee Trail. Between 1821 and 1880, the Santa Fe Trail was primarily a commercial highway connecting Missouri and Santa Fe, New Mexico.

Along the way to California they meet some very fascinating and original characters, many of whom will accompany Garnet on her journey throughout the novel. On the trip to California, Garnet and a new friend, Florinda, endure harsh temperatures, lack of water, and other such hardships with stoicism and bravery

The narrative takes the reader along the ride with the characters an, ultimately to California where happenings are definitely not what Garnet expected. I won't write anymore because I don't want to spoil the plot for prospective readers.

Let it suffice to say, if you enjoy adventurous historical novels, this one is for you. A real winner!

Stands the test of time!

I really enjoyed Jubilee Trail. It's the story of Garnet, a woman who leaves New York and travels to California on a wagon train in the early 1840s before the Gold Rush. Since I live in California, I really liked the imagery of what California was like when only a few 100 Americans lived here. Garnet had amazing adventures. I'm not into romance, but there was a little of that, too. Not enough to bother me. I hadn't done much research into the book before I started it. I knew it was historical fiction about California and that it got a good rating on Goodreads. I was stunned when I finished the book and found out it was written in 1950!! The book truly holds up to the test of time. It could have been written yesterday!

Two Powerful Women Make for a Great Story of the Old West

Choosing and reading this book on the Kindle App on my phone, I was delighted to discover what I thought was a contemporary "old style" sweeping western. Gwen Bristow writes a fast-paced plot, managing to encompass settings, class structure, politics -- the good and the bad -- of America in the 1840s. The plot zips along quickly, but with the journey beginning in New York and continuing to New Orleans, Independence, MO, Santa Fe, and on to Los Angeles there is ample opportunity to smell the flowers and buffalo chips. Bristow's colorful array of characters include two very different heroines whose lives are slowly transformed through the course of their travels. I kept thinking it would make a great movie. It wasn't until the end I discovered Jubilee Trail HAD been made into a movie -- in 1954. No matter. The story, written in 1950 about America on the verge of tremendous western expansion, holds up well.

About the Author
DEAN SEWELL is Senior Lecturer in Human Physiology and Metabolism at Heriot-Watt University.

PHILIP WATKINS is currently the Performance Director for Sports Performance Consultancy (SPC) Ltd in Derby, UK, having lectured and taught physical education, sports biomechanics and strength and conditioning across all levels of the UK education system for almost 20 years. In addition, Phil has worked extensively with elite athletes providing scientific support across a variety of sports. He is a BASES Accredited Interdisciplinary Sport and Exercise Scientist, a UKSCA Accredited Strength and Conditioning Coach, and an NSCA Certified Strength and Conditioning Specialist. As an athlete, Phil has over 14 years' international competitive experience, having represented both Wales and Great Britain in the sport of powerlifting. He has won British, European and World titles and, more recently, is the 2011 Commonwealth Deadlift champion and Powerlifting silver medallist.

MURRAY GRIFFIN is Lecturer in the Department of Biological Sciences at the University of Essex.
